OATMEAL COOKIES





INGREDIENTS:


All purpose flour ¾ cup

Oatmeal powder (Old fashioned oats powdered in blender) ¾ cup

Old fashioned oats 1 cup

Egg replacer powder [1 1/2tsp powder + 1 tblsp warm water ](To replace 1 egg)

Walnuts, pecans 1 cup toasted and chopped

Raisins ¼ cup

Cinnamon powder 1 tsp

Nutmeg powder ½ tsp

Vanilla Extract 1 tsp

Light brown sugar ½ cup

Honey ½ cup

Butter 1 tblsp

Baking soda ½ tsp

Salt ½ tsp


METHOD:

1) Preheat the oven to 350 degrees.


2) Beat together butter and sugar until fluffy using a electric or hand mixer. Add egg replacer, vanill and honey and beat well for 5 mins.


3) In a separate bowl mix flour, oats powder, cinnamon, nutmeg, baking soda and salt.


4) Add the flour mixture to the wet ingredients and mix thoroughly.


5) Stir in the oats, nuts and raisins.


6) Place the baking sheet with foil sheet or parchment paper.


7) Drop batter using a round shaped tablespoon (or you can use an ice cream scoop) onto baking sheet.


8) Flatten the cookies slightly.


9) Bake the cookies for 15 mins or until golden brown.


10) Let the cookies cool for 1 minute and then transfer to a wire rack.


11) Store these cookies in a airtight container and enjoy.



NOTE: I have used less butter and replaced 3/4 cup oats powder instead of all purpose flour. Hence the cookies were not very soft. It was crisp. If you want a soft cookie you can add more butter.
