Okra stir fry




INGREDIENTS:

Okra (bhindi) 2 lbs
Large potato 1
Garlic 5 cloves
Chickpea flour 2 tblsp
Peanuts powdered 1 tblsp
Turmeric powder 1/4 tsp
Chilly powder 2 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Sugar 1 tsp
Lemon juice 1tsp
salt to taste.


For seasoning:

Oil 3 tblsp
Mustard seeds 1tsp
Cumin seeds 1 tsp
Hing a pinch
Curry leaves



METHOD:

1)Wipe each bhendi with kitchen towel and spread out to dry thoroughly.

2)Cut the bhendi to small pieces at an angle.

3)Cook potato in microwave for 6 mins and mash them and keep aside.

4)Crush garlic cloves.

5)In a large pan heat oil and add garlic.When garlic is light brown add mustard,cumin,hing and curry leaves.

6)Then add bhendi and stir fry in medium heat for 8 mins.DOnt cover the pan.

7)To this add all the spicy powders,salt,peanut powder and mashed potato and continue cooking.

8)Once bhendi is cooked add chickpea powder and cook for another 5 mins until besan cook.

9)Turn off the heat and add lemon juice and garnish with cilantro.
