Aviyal





INGREDIENTS:

Mixed Vegetables 2 cups
(Carrot, Beans, Potatoes, Drumstick, Raw banana, Peas)
Mustard seeds 1 tsp
Curry leaves 1 strand
Curd 1/2 cup
Hing a pinch
Turmeric 1/4 tsp
Oil 2 tsp(coconut oil is good)
Salt to taste

TO Grind:

Green chillies 3
Coconut 1/2 cup
Garlic 2 cloves(Optional)
Onion 1 small(Optional)


METHOD:

1)Chop the vegetables into 1" long pieces.

2)Cook vegetables with 2cups of water until just done( Do not overcook,they should hold the shape).

3)Grind coconut, green chillies with onion and garlic(if using) with less water.

4)Drain the vegetables when done.In meantime beat the curd.

5)Heat oil in a pan add mustard seeds when it splutters add curry leaves,hing.

6)Add the grinded mixture,turmeric and cook for 5 mins.Then add chopped vegetables and salt mix together.

7)You can add little water if required.

8)Add beaten curd and mix well and cook for 2 mins.Turn off the heat and garnish with coriander leaves.Serve with rice.

My favourite dish, it contains lots of vegetables and healthy. Yours looks tempting.

Thanks for your comment in chickpea cutlet. Mine was also not so had like other cutlets but it came to shape
