INGREDIENTS:
Toor dal 1cup
Turmeric 1/2 tsp
Oil 1tsp
Mixed vegetables(Beans,carrot,yam,potato,chayote squash),cut into small cubes 2 cups
Dill leaves chopped 1/2 cup
Peanuts 1tblsp
Jaggery 2 tsp
Tamarind paste 1 tsp
Curry leaves
Salt to taste
FOR MASALA:
Grated coconut 1/2 cup
Bengal gram 1 tsp
Black gram 2 tsp
Cumin seeds 1 tsp
Coriander seeds 1 tsp
Red chillies 4
Pepper corns 1/2 tsp
Oil or ghee 1 tsp
SEASONING:
Oil 1tsp
Mustard seeds 1/2 tsp
Asafoetida 1/2 tsp
METHOD:
1)Cook toor dal in a pressure cooker with water, turmeric, oil.
2)Heat oil in a pan and fry the masala ingredients (except the coconut) until lightly browned.
3)Grind the masala ingredients with coconut and little water to a fine paste.
4)Put all the vegetables into a pan,add water and bring to boil until vegetables are tender.
5)Add chopped dill, peanuts and cook until soft. Add salt,ground paste,cooked dal,tamarind,jaggery and curry leaves.
6)Simmer and cook for 10mins.
7)Heat oil in a pan add the seasonings.
8)Mix the seasoning into the kootu and stir.Serve hot with rice or chapathi.
