INGREDIENTS:
Basmati Rice 1 cup
Mint leaves fresh 1 cup
Green chillies 2 (or more according to your taste)
Green peas 1/2 cup (i used frozen)
Corn 1/2 cup(fresh or frozen)
Onion thinly chopped 1
Cardamom pods 2
Cloves 1
Cinnamon 1 stick
Bay leaf 1
Ginger 1" chopped finely
garlic 2 cloves
Lemon Juice 2 tsp
Oil 1 tblsp
Water 2 cups
Salt to taste
METHOD:
1)Wash and soak rice in cold water for 15 mins.(Soak only if you are using basmati rice).
2)Grind ginger,garlic,green chillies and mint leaves with little water.
3)Heat oil in a rice cooker and add cumin seeds, When it splutters add onion and fry until transparent.
4)Now add the mint paste and stir for 5mins until the raw smell disappears.
5)Then add peas,corn,water,rice and salt, Mix well.
6)Close the lid and set the reading to cook.
7)When the rice is cooked add lime juice, mix well and serve with raita.
NOTE:
If using pressure cooker, After adding water let it come to boil then add rice and close the lid with weight and cook on low heat for 8 to 10 mins.
