Vangi Bhath (Eggplant Rice)






INGREDIENTS:

Basmati Rice 1 cup
Eggplant 1 cut into 1 inch pieces
Onion 1 thinly sliced
Mustard seeds 1 tsp
Urad dal 1 tsp
Chana dal 1 tsp
Peanuts 1 tblsp
Curry leaves 1 strand
Turmeric 1/4 tsp
Vangi bath powder 1 tblsp
Salt to taste
Lemon juice 2 tsp
Oil 1 tblsp



METHOD:


1)Wash and soak rice in water for 10 mins.Cook rice in a rice cooker(While cooking rice i added a stick of cinnamon, clove and bayleaf).Do not overcook rice, Each grains should be separated.

2)Heat oil in a pan and add mustard seeds. When it splutters add urad dal, chana dal, curry leaves, peanuts and fry.

3)Add onion and fry until translucent.

4)Now add chopped eggplant,turmeric powder and cook until eggplant are tender.

5)Add vangi bath powder and salt to this mixture and cook for another 5 mins.

6)Turn off the heat add lemon juice and mix with cooked rice.Serve hot.
