Penne pasta with broccoli and sundried tomato




INGREDIENTS:

1 cup penne pasta
1 cup broccoli
1/2 cup sundried tomato
1 small onion sliced
Mushroom thinly sliced 1/4 cup(optional)
Garlic 2 cloves crushed
Pepper 1tsp
Tomato sauce 1/4 cup
Salt to taste
Oil 1tblsp



METHOD:

1)Boil 4 cups of water.add salt and pasta to the boiling water.


2)Cook broccoli with little water in microwave for 5 mins.Or you can also add broccoli to the pasta water before 5 mins to turn off the heat.

3)In a pan add olive oil,to this add garlic and onion cook for 5 mins.

4)Now add sundried tomato,mushroom and broccoli saute for 5 mins.

5)Add 1/4 cup of pasta water and salt to the mixture and let it cook in medium low heat.

6)Meanwhile drain pasta and add to the mixture.Now add pepper and 1/4 cup tomato sauce and cook for another 5 mins.

7)Turn off the heat garnish with cilantro or parsley.

That's a nice vegan pasta dish without loads of cheese. I too prepared something similar recently.
